Salad for weight loss should not be boring! Salad Creation on Friday night.
Salad is a delicacy when you add few simple creations to it.
Ingredients
Baby spinach
Baby broccoli
Chopped red onion
Roasted whole garlic (see below for preparation)
Chick pea
Small chunks of avocado
Different colorful sweat peppers
Chopped tomatoes
Sliced mushroom
Asparagus
Eggplant slices
Lemon/lime wedge
My usual groceries include all the above. Eating usual salads gets boring after few continuous days. It is cold. It is chunky. Not all part of the green is evenly delicious and so on. So you want to pour few packages of ranch, thousand island etc. Few packages of dressing can increase your calories consumption without realizing it.
I donot like to put butter, cheese, and margarine in my cooking. Not only they gives you so much calories but also make you feel bloated and gassy.
This is how I do it.
Chop all the ingredients as above in dime size or smaller. They all should be approximately same size. Tomato in large circular slice, onion in small pea size is not going to mix well.
Heat the pan, spray the canola oil. Spread 2 table spoonful of grounded ginger on the pan, and let it brown. Use the large base pan. Put chick peas, asparagus, eggplant, onion, pepper, baby corn, mushroom, broccoli. Layer them in the pan. Keep for approximately two minutes, then turn to other side two minutes. All will be flavored with roasted ginger flavor. (You donot necessarily have to put all the veggie described)
In a small pan, heat a table spoonful of canola oil, put peel garlic clove ( non chopped). Keep in low heat till tender( turn to light brown)You can sprinkle water to make it tender. It will be well roasted with nice flavor. It take approximately 5 mins.
In a salad bowl, put raw baby spinach, all heated roasted veggie, garlic cloves, and chopped avocado. Put small thin cut cilantro, fresh squeeze lemon/lime. If you like spicy, include the chilli flakes when you are roasting the veggie.
They all mix well with salt, lemon, and chilli flakes. Same consistency, warm, tender and it is a delicious and healthy meal. Not Just a salad.
You will notice that I do like to put a lot of roasted ginger and garlic. That prevent you from feeling bloated and greasy feeling after meals. Try putting them in you meal and observe that. If you easily get indigestion, try to add thin slices of "lime peel" mixed with the salad. It is bitter, you donot want to exceed more than 2-3 pieces in each meal.
Colorful delicious healthy salad will be at the dinner in twenty minutes. Donot forget to put a glass of water at the side for everyone.
TIP! Get two different oil at home. Canola for the warm serve and the olive oil for the cold serve. If you need to put on the heated pan, you want to use canola. Use olive oil when you want to use for cold dip.
